Here Are Some General Guidelines for Making Your Cooking Experience Safe and Enjoyable
CLEAN HANDS AND CLEAN UTENSILS! Sickness from food related causes can ruin your whole day! Germs that cause illness (sometimes serious enough to cause hospitalization or even a call to the mortician) breed in a dirty, greasy, environment. Flies and other unsavory critters are also attracted to unsanitary camp kitchens and bring them other germs and health problems. Make sure that YOUR camp kitchen isn't a health hazard. ALWAYS make sure that food handlers have well-washed hands and that all utensils are clean before using them. Use HOT soapy water when washing hands and utensils, then rinse thoroughly. We recommend that utensils be allowed to air dry.
THROUGHLY COOK ALL RAW FOODS, ESPECIALLY MEATS! Bacteria that cause serious illness may be present in the raw foods, particularly the raw meats you are issued. YOU MUST BE VERY CAREFUL TO THROUGHLY COOK ALL FOODS, PARTICULARLY MEAT AND POULTRY! Cook meats slowly on medium heat so that the food is heated through, and cut open pieces of meat to see if they are done. Food cooked on a high heat can be burned on the outside and still be raw on the inside. This is an open invitation to disaster! If YOUR food is burned on the outside and raw inside, your cooking surface is too hot. Reduce the heat by turning the flame down on your stove.
DISPOSE OF LEFTOVERS Saving cooked leftovers is another NO-NO in a camp kitchen. You have no way to properly refrigerate leftovers and leaving them out in the open not only attracts flies and other unsavories, it also lets dangerous bacteria and other germs grow unchecked in your nice warm, exposed goodies. You will always be issued enough food for each meal and will never have to keep cooked food from meal to meal. ALWAYS properly dispose of uneaten cooked foods. Mountain Man 2006 Dutch Oven Cook-off
